Dinner tonight was a win! Tasty, a little spicy and tangy, with tomato-y goodness. The zucchini noodles were raw so they still had a good crunch but were slurpable and the tuna just melted in and wasn’t overly present, in a good way. Mr. Foggy Foodie’s review: “this was one of your best so far.” YAY!

  1. this looks delicious! I just started using zucchini as my ‘pasta’ and it’s way better than I expected. I have mostly just used Butternut squash but I like the zucchini better. Hadn’t thought of adding tuna to my tomato-y pasta meals, that’s a great idea! Looks like the perfect combo

    1. Hi Roadtrip Cowgirl! Thanks for the follow, likes and comment. Helps keep me motivated!!! 🙂 I was surprised by how much I like zucchini noodles, like I *really* like them and they do keep me from missing pasta like mad. It’s the only replacement so far on this diet that has worked (as opposed to finding a soy sauce replacement). The tuna (though probably high in Mercury, sigh) is awesome in this dish. Gives it body but is subtle and is great and easy go to protein! If you try it, let me know. I look forward to checking out your site!
